First, spread the softened log of goat cheese in a circle on top of a round pedestal serving platter.
Next in a small bowl add the extra virgin olive oil, and balsamic vinegar, then add a tablespoon of the reserved sun-dried tomato oil.
Crush the garlic cloves and add to the mixture.
Finely chop the rosemary. Add to the bowl of oil and vinegar. Salt and pepper to taste.
Add a single layer of sundried tomatoes, then a layer of gently torn fresh herbs (basil) on top of the goat cheese spread,
Top off with a layer of kalamata olives.
Sprinkle fresh rosemary sprigs.
Chill for 1 hr.
Just prior to serving your herbed goat cheese dip, drizzle the balsamic mixture over the top. Serve with bread slices or French baguette bread, crackers, or crostini.
