Sundried Tomato and Goat Cheese Crostini Recipe

Ingredients
  

  • 1 Jar Sundried Tomatoes Julienne cut
  • 8 oz Goat Cheese (Optional cream cheese may be used)
  • 3 oz Kalamata Olives sliced
  • Basil 5 -7 leaves
  • Loaf of crostini bread or crackers

Balsamic Drizzle

  • 3 Tbsp Balsamic Vinegar
  • 3 Tbsp Olive Oil (1 tablespoon reserved sundried tomato oil)
  • 3 Cloves Garlic
  • Rosemary several sprigs or to taste
  • Salt & Black Pepper to taste

Instructions
 

  • First, spread the softened log of goat cheese in a circle on top of a round pedestal serving platter.
  • Next in a small bowl add the extra virgin olive oil, and balsamic vinegar, then add a tablespoon of the reserved sun-dried tomato oil.
  • Crush the garlic cloves and add to the mixture.
  • Finely chop the rosemary. Add to the bowl of oil and vinegar. Salt and pepper to taste.
  • Add a single layer of sundried tomatoes, then a layer of gently torn fresh herbs (basil) on top of the goat cheese spread,
  • Top off with a layer of kalamata olives.
  • Sprinkle fresh rosemary sprigs.
  • Chill for 1 hr.
  • Just prior to serving your herbed goat cheese dip, drizzle the balsamic mixture over the top. Serve with bread slices or French baguette bread, crackers, or crostini.
