- 8 Eggs
- 2 medium Potatoes (any fresh potatoes are fine - red potatos, russet potatoes, or yukon gold potatoes.
- 1 medium Yellow Onion
- 1/2 tsp Fresh Ground Black Pepper
- 2 TBSP Extra Virgin Olive Oil
- Italian seasoning or various spices (Oregano, Garlic salt, Garlic powder, Parsley, Kosher Salt)
- Parmesan Cheese (optional)

In large bowl dice potatoes and set aside.
Evenly chop the onions.
Cover the bottom of the pan with extra virgin olive oil.
Over medium heat, in a cast iron or nonstick skillet, saute the onions and potatoes for 4-5 minutes until golden brown.
Add garlic powder, garlic salt, oregano, and parsley to the potato mixture.
Beat the eggs and add a pinch of salt.
Add the beaten eggs to the frying pan.
Cook the egg mixture, potatoes, and onion for an additional 3-4 minutes on medium-high heat.
Using a spatula, gently scrape the sides of the pan.
Once the eggs are almost set and the top is runny, place in the oven on broil for 3-4 minutes. Serve immediately.
