It’s no surprise that cooking can sometimes feel like a daunting task, especially when recipes call for lots of ingredients and time to make them. (remember my unspoken, spoken rule where I try to make meals using 10 ingredients or less?) You don’t have to slave away in the kitchen all day to enjoy a delicious, homemade soup!
In this blog post, I’ll share with you some easy soup recipes that are made with few ingredients and simple steps that anyone can follow. No matter your skill level or budget, you’ll be able to whip up tasty soups in no time – so read on for more delicious inspiration!
What is the secret to making good soup?
Eating good soup truly is good for the soul. Lately, I just can’t get enough of it. Last week our temperatures hit a record low of 30 below zero with the wind chill, which means soup was our go-to for warming up on the inside.
So how to make a really good broth?
Is there any magic to getting your soup to taste delicious?
There sure is!
Making good soup does not need to be complicated! Keeping it easy with easy soup recipes with few ingredients is the secret to making a delicious soup.
10 Tips for making a delicious soup
- Start by using quality ingredients, such as low-sodium broths (I only use organic broth you can find in the market, or if I have time I boil chicken and use that stock)
- Second, use a really good stockpot. It’s worth it! Even heating is everything.
- If possible use fresh herbs, as they can make all the difference in a basic recipe.
- Pay attention to your cooking techniques like sautéing the onion until they are golden before adding broth, or
- Slow simmering a stew-style soup throughout the day.
- Carefully cut vegetables to similar size
- Add ingredients slowly, giving each layer of flavor time to blend together
- Keep the liquid at a simmer, not boiling
- Finally, I add my spices closer to the beginning rather than at the end. I like that they marry into the broth that way. (if using fresh herbs such as tarragon that are more delicate herbs, I’d add those closer to the end of the soup cooking)
- Following simple techniques can help enhance flavors and create an extra special dish that your family will enjoy any night of the week.
What can I use if I don’t have stock?
This could be the million-dollar question. Maybe, maybe not, but stick with me for a minute.
What if you don’t have stock in the house and you’re craving a bowl of yummy warm soup? How can you make easy soup recipes with few ingredients when you’re lacking one of the important ones?
You can still whip up the easy and delicious soup by substituting stock with water.
In this case, I’d throw in some spices and customize your soup with garlic powder or rosemary, or add extra veggies for an easy vegetable-packed meal.

Easy Vegetable Soup with Spring Lettuce Recipe
What You’ll need:
- Olive oil (extra virgin is best)
- 2 Leeks
- 2 Medium Potatoes
- 2 Carrots
- 3 Cloves of Garlic
- 6 Cups Chicken Stock (Vegetable Stock works fine as well)
- 1 cup Frozen Peas
- 1/2 cup Fresh Tarragon
- 5 cups Spring Lettuce (romaine or butter)
- 1 Lemon
Best Spring Lettuce with Leeks Keto Soup Recipe
Ingredients
- 3 tbsp Olive oil
- 2 Leeks – trimmed, sliced and thoroughly rinsed
- 2 medium Potatoes, peeled and chopped Leave out for Keto
- 2 Carrots, sliced thin Leave out for Keto
- 3 cloves Garlic, Chopped finely
- 6 cups Vegetable Broth (Chicken broth can be used)
- 1 cup Fresh or frozen peas or green beans Leave out peas for keto
- 1/2 cup Fresh tarragon leaves Finely chopped
- 4 cups Spring lettuce (butter or romaine) Gently torn
- 1 Lemon, juiced
- Salt and pepper to taste
- crusty bread
Instructions
- In medium stock pot, heat the olive oil over medium heat
- Add leeks, potatoes, carrots and garlic
- Season with salt and pepper
- Stir for 1 minute
- Cover and cook, stirring occasionally, until vegetables are soft (6 to 8 minutes)
- Add the stock, peas and tarragon
- Simmer until peas are tender, 3 minutes for fresh peas, or 5 minutes for the frozen peas
- Add the lettuce and stir just until wilted (30 seconds)
- Stir in lemon juice
- Serve with crusty bread
